Packaging Food for the Freezer

How well you package your food for freezing will affect its quality. To prevent freezer burn and preserve freshness, try this simple technique. The plastic-and-foil-wrap method is handy for semisolid foods such as casseroles. Before filling your baking dish, line it with heavy-duty aluminum foil and then with plastic wrap, making sure you have enough to overlap the top of the dish. Once the food has cooled, it's ready to be packaged. Fill the lined baking dish and use the plastic wrap layer to cover the top; remove as much air as possible. Then seal the plastic wrap with the foil layer and place the pan in the freezer. Once it's frozen, remove the sealed meal from the pan and place it in a plastic resealable freezer bag. Remove foil and plastic wrap before baking. Use a label to identify and date your dish. Include an expieraation date. Many casseroles can be frozen for up to 3 months.
