Freezing Egg Whites and Yolks
Extra egg whites and yolks can be frozen for use in another recipe. Freeze egg whites in ice cube trays and then transfer to resealable plastic freezer bags. When freezing egg yolks, be sure to mix them with either sugar or salt before freezing (depending on whether you plan to use them in a sweet or savory recipe); otherwise, they will be pasty and hard to mix later on. For four egg yolks, mix in 1-1/2 tsp. sugar or corn syrup or 1/8 tsp. salt before freezing.
