My husband and I love mashed potatoes made with evaporated milk. However, the recipe I use only calls for a quarter of the can. To avoid wasting the rest of the milk, I pour it in ice cube trays specifically used for that purpose. Once frozen, the cubes store nicely in a resealable freezer bag, and I can pull out a few whenever I need some evaporated milk for a recipe. —Carol Topping, Paonia, Colorado
