Casserole for Two

Cooking for two can be a challenge, but I discovered a simple way to reduce the number of servings in some casseroles. If the recipe calls for a 13- x 9-inch baking dish, I reduce the ingredients by half and divide the mixture into two 1-quart dishes. The shallower fill makes it the perfect size meal for my husband and me. I bake one casserole for dinner and keep the other in the freezer for another meal. —Laura Kittleson, Sandy, Utah
