Perfect Cheese Fondue

To serve a smooth and delicious cheese fondue, keep these tips in mind. Cheese can curdle easily when overheated. So reduce the heat to low before stirring the cheese into hot liquids. Keep the heat at low while the cheese melts.

Cheese will melt faster and easier if it is shredded or cut into small cubes.

Cheese fondues are traditionally made with white wine, which not only adds flavor but helps prevent the cheese from becoming stringy. If you don't wish to use white wine, substitute broth or apple juice for the wine and add a little lemon juice.
