Problem-Solving Pointers for Cream Puffs & Eclairs

The water was boiled too long, causing too much liquid to by evaporated.

Bottoms are Soggy

Puffs or eclairs were filled too soon. Fill just before serving and no sooner than 2 hours beforehand.

Puffs are Not Crisp

Puffs are underbaked. They should be golden brown, crisp and dry.
