Successfully Making Quick Breads

To prevent a disappointing loaf next time, use the simple method that's just right for quick bread: Mix wet and dry ingredients separately and combine them only until moist. (Don't worry about any small lumps; they will disappear while baking.)

Check your oven with an oven thermometer. A cool oven may produce an undercooked center. And for best results, use heavy, good-quality loaf pans. Disposable baking pans may cause the bread's exterior to bake faster than the interior.
