Making Mini Loaves
If you are baking for two, you can turn full-size yeast bread recipes into mini loaves. A recipe that uses about 3 cups of flour and makes 1 loaf of bread can be baked in two 5-3/4-in. x 3-in. x 2-in. loaf pans. For a recipe that uses 5-6 cups of flour, use four pans. Bake as directed, but check for doneness about 10 minutes sooner. Enjoy one loaf and cool the remaining loaves. Wrap individually and freeze for up to 3 months.
