I am planning to make spice beef, but I'm having trouble finding a retailer who sells crocks. If I can't get a crock, can I use a large plastic bucket instead? —J.S., Surrey, British Columbia
Spice beef—a recipe that marinates beef in wine, cider or another flavored liquid and spices—can, indeed, be soaked in a bucket. Actually, any clean food-safe container made of glass, ceramic or stainless steel can be used. Or place the beef and marinade in a large resealable plastic bag, then in a large pan or bowl, to keep the beef fully submerged in the marinade.
