Prepared Meals

I have noticed that busy cooks often freeze meals ahead of time. I'm wondering how to do this. Any help you can give me would be greatly appreciated. —T.H., Oakdale, California

Freezing meals ahead is a great idea for on-the-go cooks. It's easy to assemble individual meals of cooked foods and freeze them for future use. Just arrange single serving-size amounts of foods on aluminum foil or freezer-safe plates. Cover meats with gravy or sauce, when possible, to help retain their moisture. Wrap plates in heavy-duty foil and slip into a freezer bag. Freeze for up to 3 months. Defrost meals in the refrigerator…or uncover and defrost in the microwave. Then just heat and serve!
