High Altitude Cooking
Is there any way recipes could be written for folks living at high altitudes as well as at sea level? Sometimes I'm not sure what recipes to adjust and how to adjust them. —P.W., Buena Vista, Colorado
Our Test Kitchen is aware that many recipes that work at sea level need to be adjusted to be successful at high altitude. Unfortunately, the many variables of high-altitude cooking make it difficult to print specific instructions. As you likely know, at altitudes above 3,000 feet, adjustments may be needed in time, temperature and the recipe itself. For information about your specific area, contact your county Extension agent.
