Unfortunately, there is nothing you can add to bread to make it as shelf-stable as commercial bread. There are a few things, however, that you can do to ensure that homemade bread stays fresh. It's best to store bread at room temperature in a cool dry place for up to 2-3 days. Heat and humidity cause homemade bread to mold. Storing it in the refrigerator turns it stale quickly. To keep bread soft, store in an airtight plastic bag. You might want to try storing homemade bread in the freezer, where it will keep fresh for up to 3 months. Slice it before freezing, then just take out one or two slices at a time as you need them.
