To calculate nutritional values, I'd like to know how much salt is retained in potatoes and pasta after draining the cooking water. —B.R., Simi Valley, California

Although the amount may vary slightly, depending on the food being cooked, scientific studies have shown that about 33% of the sodium is retained. So, if 1 teaspoon of salt is added to the cooking water, 1/3 teaspoon or about 800 milligrams of sodium will be retained. To determine the amount of sodium per serving when you are calculating nutritional values, divide the amount retained by the number of servings.
