Nutritional Value of Onions
I cook with a lot of onions. What kind of nutritional value do they have? —M.F., Peterstown, West Virginia
Onions are low in calories but high in taste—they’re an excellent way to boost the flavor in light and savory dishes. Onions contain only a trace amount of calcium and iron but are a good source of potassium. Comparatively speaking, 1/2 cup of chopped onion yields about 240 mg of potassium (similar to 1/2 banana or 1/2 cup of orange juice).
