Heavy Cream Substitute

I often try to tweak my old favorite recipes to make them healthier. But I have not been able to find a substitute for heavy cream. Occasionally, I've substituted nondairy whipped topping if the heavy cream is to be whipped and sweetened. Otherwise, I am at a loss. Do you have any ideas? —P.I., Mechanicsburg, Pennsylvania

There's no question about it, heavy cream lends an undeniably rich flavor and creamy texture to many foods. However, at 100 calories and 11 grams of fat per 2 tablespoons, it can be a calorie and fat buster! We have found that substituting an equal amount of half-and-half cream for the heavy cream called for in a recipe generally works quite well. That's a savings of 60 calories and 8 grams of fat per 2 tablespoons…and the flavor and texture of the dish remain quite satisfactory.
