At this time of year, we have more green peppers than we can use. I like to chop and freeze them in 1/4-cup amounts. How much does a medium or large green pepper yield? I'm wondering the same thing about medium and large onions. —M.B., New Glarus, Wisconsin

Freezing peppers and onions is a great way to enjoy garden produce when summer days are long gone. A medium green pepper, chopped, will yield about 1 cup. A large green pepper, chopped, will yield about 1-1/3 to 1-1/2 cups. A medium onion, chopped, will equal about 1/2 cup; a large onion will yield about 1 cup. Store both green peppers and onions in heavy-duty resealable plastic bags. Green peppers can be frozen for up to 6 months, and onions can be frozen for up to 1 year.
