If using frozen rhubarb, measure rhubarb while still frozen, then thaw completely. Drain in a colander, but do not press liquid out.

Look for pepperoncinis (pickled peppers) in the pickle and olive section of your grocery....
If mint chocolate chips are not available, place 2 cups (12 ounces) semisweet chocolate chips....
