One Christmas, I bought some blank cookbooks and asked Mom to jot down her favorite recipes for us, including strawberry freezer jam, cheese puffs, turkey rice casserole, apple pudding and cheese souffle with mushroom sauce.
Unfortunately, Mom didn't complete the cookbook before she passed away a few years ago. Still, that book is a treasure I use often, particularly during the holidays.
What I like best about it is that the recipes are in her own handwriting. So although I may never be able to cook just like my mom, I will have her with me while I try.
There's one image of my mother that I'll cherish forever. Whenever anyone walked into our kitchen, they'd be greeted by Mom, up to her elbows in dishes, wearing a pretty apron and a warm, glowing smile.
I'm glad that I've had this chance to pay tribute to her by sharing this special meal with you.
