Ingredients

  • 1 can (14-3/4 ounces) cream-style corn
  • 2 large eggs
  • 1/2 cup crushed saltines (about 15 crackers)
  • 1/4 cup butter, melted
  • 1/4 cup evaporated milk
  • 1/4 cup shredded carrot
  • 1/4 cup chopped green pepper
  • 1 tablespoon chopped celery
  • 1 teaspoon chopped onion
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a large bowl, combine the first 11 ingredients. Transfer to a greased 1-qt. baking dish. Sprinkle with cheese.
  2. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.
