Layered Christmas Gelatin Recipe

Ingredients

  • 1 package (3 ounces) lime gelatin
  • 1 cup boiling water
  • 1/3 cup unsweetened pineapple juice
  • 1 cup crushed pineapple, drained
  • CREAM CHEESE LAYER:
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup milk
  • BERRY LAYER:
  • 2 packages (3 ounces each) strawberry gelatin
  • 2 cups boiling water
  • 1 can (14 ounces) whole-berry cranberry sauce
  • Whipped topping, optional

Directions

  • Dissolve lime gelatin in boiling water; stir in pineapple juice. Stir in pineapple. Pour into an 11-in. x 7-in. dish; refrigerate until set.
  • In a small saucepan, sprinkle unflavored gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Transfer to a small bowl. Beat in cream cheese and milk until smooth. Spread over lime layer; refrigerate until set.
  • Dissolve strawberry gelatin in boiling water; stir in cranberry sauce. Cool for 10 minutes. Carefully spoon over cream cheese layer. Refrigerate until set.
  • Cut into squares. Garnish with whipped topping if desired. Yield: 10 servings.

Nutritional Facts 1 piece (calculated without whipped topping) equals 267 calories, 8 g fat (5 g saturated fat), 26 mg cholesterol, 139 mg sodium, 46 g carbohydrate, 1 g fiber, 5 g protein.

Carefully Add Layers

When making a layered gelatin salad, it's helpful to gently spoon (rather than pour) each layer onto the previous layer of gelatin so it doesn't break through the other layers. —Janet Biersach, Mauston, Wisconsin

This is not only a beautiful dish. It is delicious! I dont like really sweet desserts, this is perfect.

I don't care for cranberry sauce but this recipe was delicious. I felt it needed the whipped topping but next time I'll try adding 1/2 cup powdered sugar to the cream cheese mixture.

It is a lot of prep for little results. I added 1/2 cup of powdered sugar to the middle layer so it wouldn't be so bland.

Our version of this is very similar, except that for the cream cheese layer, we mix 1/2 C. mayo, topped with 12/ C.chopped walnuts. Always a hit is a cut glass bowl or trifle bowl.

Lots of preparation time for lackluster results. Middle layer of cream cheese is worse than bland.

I made this in 8 oz. plastic cups, It takes some time but everyone just grab a cup! It was a great hit.

This salad has become a tradition in our family over four generations...it always is a taste pleaser. Even for those who say they don't like jello...

This salad went very well with our holiday meal. It was not as sweet as other variations I have tried. I liked the additions of pineapple & canned whole cranberry sauce. It will be on our holiday table from now on. Thanks.
