This baked chicken with pineapple and brown sugar is such a step up from a plain chicken breast. My family thinks the glaze also tastes good over ham. —Mary Ealey, Smithfield, Virginia

Ingredients

  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 cans (8 ounces each) crushed pineapple, undrained
  • 1/4 cup soy sauce
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon ground ginger
  • 6 boneless skinless chicken breast halves (4 ounces each)
  • Minced chives, optional

Directions

  1. Preheat oven to 350°. In a small saucepan, combine brown sugar and cornstarch. Stir in pineapple, soy sauce, garlic salt and ginger. Bring to a boil over medium heat; cook and stir until thickened, about 1 minute.
  2. Place chicken in a greased 9-in. square baking dish. Pour half the sauce over chicken. Bake, uncovered, 15 minutes. Baste with remaining sauce. Continue baking until a thermometer reads 165°, about 10 minutes longer, basting occasionally. If desired, sprinkle with chives.
Baked Chicken with Pineapple Tips

Can you use pineapple juice instead of crushed pineapple?

Yes! You might miss the texture of the pineapple, though. You should be able to use the same amount of juice as the recipe calls for crushed pineapple, but keep an eye on the sauce in case it becomes too thick. Thin it out with more juice if you need to.

How else can you cook chicken with pineapple and brown sugar?

Want to throw this recipe in the slow cooker? Convert it to a convenient slow-cooker recipe by layering the chicken and sauce in a 4- or 5-quart slow cooker, cooking for 2-3 hours on low or 1-2 hours on high. Check the internal temperature to make sure it's 165°F before removing.

What can you serve with baked chicken with pineapple?

This recipe can really round out a tropical night in. Start with some bacon-wrapped Spam bites. Then, serve your chicken with buttery Hawaiian rolls, and finish with a slice of pineapple pie with coconut cream.
