Ingredients

  • 2/3 cup reduced-fat mayonnaise
  • 1/2 cup reduced-fat sour cream
  • 1/2 cup buttermilk
  • 1 tablespoon red wine vinegar
  • 1 tablespoon stone-ground mustard
  • 1-1/2 teaspoons lemon juice
  • 1-1/2 teaspoons Worcestershire sauce
  • 1/3 cup grated Parmigiano-Reggiano cheese
  • 2 anchovy fillets, minced
  • 2 garlic cloves, minced
  • 1/2 teaspoon coarsely ground pepper

Directions

  1. In a small bowl, whisk the mayonnaise, sour cream, buttermilk, vinegar, mustard, lemon juice and Worcestershire sauce. Stir in the cheese, anchovies, garlic and pepper. Cover and refrigerate for at least 1 hour.

  • Go for freshly squeezed lemon juice when preparing this summery dressing. Bottled lemon juice, which is from concentrate, won’t provide the same bright, fresh flavor.
  • Instead of buying buttermilk, you can place 1 tablespoon of white vinegar or lemon juice in a liquid measuring cup and add enough milk to measure 1 cup. Stir, then let stand for 5 minutes. Or you can substitute 1 cup of plain yogurt for the buttermilk.
