Ingredients

  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 1 large egg, room temperature
  • 1/3 cup 2% milk
  • 1 tablespoon vegetable oil
  • 1/2 cup grated peeled tart apple
  • 1/4 cup mashed ripe banana

Directions

  1. Preheat oven to 375°. In a small bowl, combine the first 7 ingredients. In another bowl, whisk egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana.
  2. Fill 6 greased muffin cups about three-fourths full. Bake until a toothpick comes out clean, 25-30 minutes. Cool 5 minutes before removing from pan to a wire rack.

You can make jumbo muffins as well. Just increase the baking time by 5-10 minutes. Insert a toothpick in the center of the muffins to be sure they are done (the toothpick should come out clean or with just a few crumbs).
