Zucchini Pasta Recipe
  • Prep/Total Time: 25 min.

Ingredients

  • 8 ounces uncooked linguine
  • 4 cups coarsely shredded zucchini (about 3 medium)
  • 4 teaspoons olive oil
  • 2 garlic cloves, thinly sliced
  • 1/4 cup fat-free plain yogurt
  • 3/4 cup shredded reduced-fat cheddar cheese
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • Cook linguine according to package directions. In a sieve or colander, drain the zucchini, squeezing to remove excess liquid. Pat dry.
  • In a large nonstick skillet, saute zucchini in oil for 2 minutes. Add garlic; saute 1-2 minutes longer or until zucchini is tender. Transfer to a large bowl. Add the yogurt, cheese, salt and pepper. Drain linguine; add to zucchini mixture and toss to coat. Yield: 6 servings.

Nutritional Facts 3/4 cup equals 219 calories, 7 g fat (3 g saturated fat), 10 mg cholesterol, 395 mg sodium, 32 g carbohydrate, 2 g fiber, 10 g protein. Diabetic Exchanges: 1-1/2 starch, 1-1/2 fat, 1 vegetable.

Wonderful recipe!! Bursting with great flavor! The only change I made is I use spinach linguine.

I also onions, carrots to the zucchini mixture. Mozz cheese, parm with the cheddar and yogurt. Next time I'm gonna add some fresh herbs.

I thought this recipe was awesome. My husband thought it had a bit too much garlic. LOL but but loved the healthiness of the dish. I used whole wheat spagetti noodles pasta instead of linguine and used greek yogurt instead of ff plain yogurt. And threw in one yellow squash. Took minutes to make since i had some left over chicken in the fridge and a food process to do all the slicing. Thanks!!! Colorful, healthy and yum!

Add some cream cheese with the plain yogurt, and some dried oregano with the garlic. I also added shredded carrots to the zucchini to add more veggies. Yummy.

We had some fresh mushrooms that needed to be used up so I sauteed them before adding the zucchini and is was great!

My husband and I give this a 4 because after reading the reviews we spiced it up by doubling the garlic, adding penzey's pasta sprinkle and sicilian salad seasoning. We also tossed in fresh basil and oregano at the end. We also used whole wheat linguine and plain greek yogurt to add to the creaminess which did help!

For extra flavor try some Mrs Dash Garlic & Herb. Has no salt!

I thought the recipe sounded good but was bland, and we do not add salt, so I added oregano to the zucchine and garlic. Still waiting for the rich & creamy part!!! Have to agree with it tasted better the next day as I took it to work for lunch today and tasted more of the flavor. Have many more Zucchini recipes that I will remake or try the new ones.

A great recipe, but because I do not use salt due to severe high BP, it was a bit bland. So I added a dash of chili pepper, oregano, rosemary, thyme and paprika to give it a Mediterranean flair. Will definitely make again using my own mix of seasonings.

Zucchini pasta is a good, delicious recipe that is easy to make and simple for all of us. I won't add the zucchini, as one of my children is deathly allergic to it, but the rest of it is just plain delicious. It's a keeper and going in my recipe box.

Delicious,

I substituted Whole wheat cork screw noodles and fat free sour cream for yogurt and used fresh grated parmesan cheese instead of cheddar. Very good- I enjoyed my lunch today-

Try using plain Greek style yogurt and/or a pinch of red pepper flakes! Also add leftover cooked chicken!

I have a recipe box just for zucchini!! I even start my zucchini plants early so they will produce faster when they get to the garden - I also put shrimp in my recipe and mozzarella cheese - this is a real keeper! Now, all I have to do is sit back and wait for the zucchini to grow!

The only change I made to this recipe was to use extra sharp cheddar (not reduced fat) and it gave it the best flavor. Both of my kids really enjoyed it!

I used vanilla Nonfat yogurt and it gave it a very mild sweet taste. I am sure someone can come up with just the right spice to make this really good.
