We planted one too many zucchini plants a few summers ago and harvested a lot of zucchinis that year. I was looking for ways to use them...this delicious dessert is the result.

Zucchini Dessert Squares Recipe
  • Prep: 30 min. Bake: 40 min.

Ingredients

  • 4 cups all-purpose flour
  • 2 cups sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1-1/2 cups cold butter
  • FILLING:
  • 8 to 10 cups cubed seeded peeled zucchini (4 to 5 pounds)
  • 2/3 cup lemon juice
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Directions

  • In a large bowl, combine the flour, sugar, cinnamon and salt. Cut in butter until crumbly; reserve 3 cups. Pat remaining crumb mixture into a greased 13-in. x 9-in. baking pan. Bake at 375° for 12 minutes.
  • Meanwhile, for filling, place zucchini and lemon juice in a large saucepan; bring to a boil. Reduce heat; cover and cook for 6-8 minutes or until zucchini is crisp-tender. Stir in the sugar, cinnamon and nutmeg; cover and simmer for 5 minutes (mixture will be thin).
  • Spoon over crust; sprinkle with the reserved crumb mixture. Bake at 375° for 40-45 minutes or until golden. Yield: 16-20 servings.

Nutritional Facts 1 serving (1 each) equals 337 calories, 14 g fat (9 g saturated fat), 37 mg cholesterol, 200 mg sodium, 51 g carbohydrate, 1 g fiber, 3 g protein.

As with the others...I was a little unsure about the zucchini. My family likes zucchini bread, but not in any other form. I made this and didn't tell them it was zucchini--they loved it and couldn't believe it when I told them it was zucchini and not apples! I will definitely make this again. I will probably use coconut oil in place of butter and try to decrease the sugar by 1/2 cup or so. It is delicious and is sure to become a family favorite!

They were a big hit and indeed if you didn't know better you'd swear it was apples.

Oh wow, I was very skeptical also, I made it for our Church group gathering and after everybody ate it I told them it was zucchini, they couldn't believe it, they LOVED it and not a bite was left. This is amazing and I have come back to it to print it all off for everyone. Thanks for sharing, will be making again soon.

I was not sure about the recipe. I thought the person that said it tasted like apples was crazy. But it really does. I told my husband to take the leftover to work but once I tried it there was noway he was taking it. Everyone loved it and we had nothing left. And yes they all thought it was apples. My daughter gave it to her husband who doesn't like zucchini and he loved. Now everyone who has tried it ask for the recipe.

This is a winner in our house.

I was skeptical about these before I made them, so I cut the recipe in half and used an 8x8 pan. I wish I'd made the whole batch! They were outstanding. Everyone thought they had apples in them. I used very young zucchini. We fed them some to family, sent some home with a granddaughter, took some to a quilting group--everyone liked them. This recipe is a keeper!
