We planted one too many zucchini plants a few summers ago and harvested a lot of zucchinis that year. I was looking for ways to use them...this delicious dessert is the result.

This recipe is the ultimate zucchini recipe!! My 5 y/o and I made it last night. She could hardly wait till it was cooled. Her exact words were "Mama, I didn't know zucchini could taste so good....tastes just like apples". I am going to can my zucchini using this recipe so we can have this dessert year round. Thank you for sharing!

My wife and I were both amazed at how good this recipe was. She thought there were apples in it as it tasted like an apple cobbler. The only changes I made was using my Italian squash instead of zucchini and adding a little of my own dried hot pepper to the dry mix and the filling. As I am swimming in summer squash right now I will be making this again to share.

<p>OMG...this is better than apple cobbler. I made this for a potluck. And it was fabulous. Not knowing what I was making, my husband tasted it and thought it was apple cobbler, (he hates zucchinni) :) It did turn out more like cobbler than squares or bars. However, had I refrigerated it before taking it to the potluck, it would have solidified more, to cut into squares. It was great!!! Thanks for sharing the recipe.</p>

Very Yum! Worked great with yellow zucchini, suspect would with yellow squash, too. Full recipe leaves lots to share, halve if there are only a few of you so the crust doesn't get soggy before you have it all eaten. Will definately share recipe and make again. P.S. I called these "Caramel Dessert Bars" for my picky eaters and they were willing to try it with a scoop of vanilla ice cream. You have to try these bars! CKL

Out of all the zucchini recipes I've used this tops them all!!As usual taste of home did it again. I have so much zucchini from my neighbor's garden and this is what we made along with the zucchini cobbler. my neighbor cut up 2 bags of zucchini for me and asked for another cobbler and dessert swuare. thank you again its a KEEPER

We have made this twice in one week. It is so fun to get people's reactions when they are enjoying this as "Apple Crisp" and you tell them they just ate Zucchini. We are sharing the recipe with all our friends. Thank you so much.

I think I should have bake it a bit longer as I wasn't real happy with the zucchini texture although the taste was great. Else, maybe cut the zucchini pieces thinner.

Everyone thinks it's apples! The zucchini mixture will be VERY watery but trust the recipe.
