This cobbler is my surprise dessert! No one ever guesses that the "secret ingredient" is zucchini. Everyone says it tastes like apples. It's great to make for a potluck supper or to serve a crowd. Zucchini Cobbler Recipe

Ingredients

  • 8 cups chopped seeded peeled zucchini (about 3 pounds)
  • 2/3 cup lemon juice
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • CRUST:
  • 4 cups all-purpose flour
  • 2 cups sugar
  • 1-1/2 cups cold butter, cubed
  • 1 teaspoon ground cinnamon

Directions

  • In a large saucepan over medium-low heat, cook and stir zucchini and lemon juice for 15-20 minutes or until zucchini is tender. Add the sugar, cinnamon and nutmeg; simmer 1 minute longer. Remove from the heat; set aside.
  • For crust, combine the flour and sugar in a bowl; cut in butter until the mixture resembles coarse crumbs. Stir 1/2 cup into zucchini mixture. Press half of remaining crust mixture into a greased 15-in. x 10-in. x 1-in. baking pan. Spread zucchini over top; crumble remaining crust mixture over zucchini. Sprinkle with cinnamon.
  • Bake at 375° for 35-40 minutes or until golden and bubbly. Yield: 16-20 servings.

Nutritional Facts 1 serving (1 piece) equals 337 calories, 14 g fat (9 g saturated fat), 37 mg cholesterol, 141 mg sodium, 51 g carbohydrate, 1 g fiber, 3 g protein.

I did not make the whole recipe but, one fourth of each ingredient(since there is only two of us) It turned out delicious. I served it with whipped cream.A GREAT way to use the zucchini.I will definitely make it again.

I made only 1/2 recipe, wasn't sure it would be as good as reviewed, was i wrong, i should have doubled the recipe, i it to work today with a note, for everyone to try and piece and then tell me what they thought it was, not one person knew, they all swore it was APPLE something

Don't want to write a review, but am wondering why it is called a cobbler. It looks more like bar cookies.

Thank you for not using ambiguous terms like small, medium, or large and giving a definite ammount of squash. I haven't made this one but based on my more than 50 years of cooking experience I can tell by the list of ingredients that this one is a keeper and will taste great. After I make it I might have to change the amount of sugar in case it is to sweet for me. Based on the other reviews this will save me a lot of time when making Tday and Xmas apple pies. I can have the Zuch already prepared and in the freezer instead of peeling and coring a bunch of apples.

I decided to try this recipe because of the

rave reviews and I was not disappointed.....my boys do not like zucchini and were pleasantly surprised by

the "apple" cobbler....couldn't believe they

ate something they didn't like......great recipe......will make again.

ALLERGIC TO APPLES? Who needs them when you have this DELICIOUS recipe. My grown kids were making fun of me when I was whipping this up, telling me to give the zuccini a rest, etc.....I told my one daughter who is allergic to apples that she would be thanking me when she ate this but I didn't tell her why. First taste and she starts screaming that it is just like apple pie!!! she couldn't believe it and was thrilled, said I now have to make it for Thanksgiving dessert so that she doesn't feel left out! Great recipe!

my sister and I decided to try this recipe when we had an abundance of zucchini. The entire family loved it including my four year
