This cobbler is my surprise dessert! No one ever guesses that the "secret ingredient" is zucchini. Everyone says it tastes like apples. It's great to make for a potluck supper or to serve a crowd. I made this 3x's now. I used gluten free all purpose flour. And I used coconut sugar and xylitol for the sugar. It is yummy, and is a good way of using them zucchini up that grew too big.

Amazing! Took to a preschool picnic and the entire pan was gone within minutes. With excessive amounts of zucchini coming out of our garden this summer, I have made this recipe many times. Even my young child requests it. No one ever guesses it's all made from zucchini (they swear it's apple)!

Delicious dessert that was a huge hit at work. Nobody could believe it was zucchini! Only change I made was in using a 9x13 cake pan.

I have been making this recipe for YEARS! Great recipe for a bumper crop of zucchini. Because I have a garden which yields tons of this veggie, I make many batches of the zucchini filling, freeze it, and then defrost for a quick dessert all winter long. All you have to do is make the crust. Everyone loves this!

I loved this recipe...and NO ONE could believe it was zucchini....I did cut the sugar in crust to 1 1/2 cups and to 2/3 for the filling. I increased the lemon juice to one cup and used 1 1/2 teaspoons of cinnamon..(I dont like nutmeg). Also added chopped walnuts....serve warm or cold...it is just GREAT!!!!!

Fantastic flavor! Though I used a 9x13 pan, and didn't cook my zucchini over much, which left me with good chunky texture. I also added some allspice and powdered ginger. A definite keeper!

I was skeptical and thought there was no way that this could taste like apple. I was wrong! These bars are the answer to an over abundance of zucchini. Yummy! Even my kids (who hate zucchini) gobbled them down!

My husband did see the recipe card while I was cooking and made a weird face as zucchini are certainly not his favorite. When I served the cobbler warm with ice cream, he gobbled the whole thing with a smile on his face saying he would never have guessed what it was. Needless to say he was quite apprehensive after seeing what was in it. I would definitely reduce the proportions for the crust to 3 cups flour, 1 1/2 cups sugar and 1 cup butter. Turned out wonderful!

The first time I tried this I thought "no way." When I tasted it, I couldn't believe that it tasted exactly like apples. I gave some to my son, who hates everything, and he said it was the best apple dessert he ever had. Everyone who tastes this dessert loves it. Thanks for a great recipe!!

Loved this recipe and it really does taste like apple pie. Next time, however, I am going to reduce the crust/topping mixture to 3 cups flour, 1 1/2 cups sugar, and 1 cup butter as I had about 1 cup left over. I also accidently added the cinnamon into the crust mixture, but I think it turned out better this way. And I recommend slicing the zucchini thin as some of my bigger pieces remained crunchy. Overall this is a great recipe and a great way to use up zucchini! (And a great way to trick people, lol.)

this is so delicious! we had so many zucchinis in our veg garden and i was looking for a good way to use them. everyone in my family loved it and it was and easy one to make. highly recommended. i added some oats on top to and it tasted great!

Next time to cut calories, I won't use as much flour, sugar or butter in the crust. There was too much crust left for the topping. I didn't feel it came out nearly as good as the picture because of it.

I did not make the whole recipe but, one fourth of each ingredient(since there is only two of us) It turned out delicious. I served it with whipped cream.A GREAT way to use the zucchini.I will definitely make it again.

I made only 1/2 recipe, wasn't sure it would be as good as reviewed, was i wrong, i should have doubled the recipe, i it to work today with a note, for everyone to try and piece and then tell me what they thought it was, not one person knew, they all swore it was APPLE something

Thank you for not using ambiguous terms like small, medium, or large and giving a definite ammount of squash. I haven't made this one but based on my more than 50 years of cooking experience I can tell by the list of ingredients that this one is a keeper and will taste great. After I make it I might have to change the amount of sugar in case it is to sweet for me. Based on the other reviews this will save me a lot of time when making Tday and Xmas apple pies. I can have the Zuch already prepared and in the freezer instead of peeling and coring a bunch of apples.

ALLERGIC TO APPLES? Who needs them when you have this DELICIOUS recipe. My grown kids were making fun of me when I was whipping this up, telling me to give the zuccini a rest, etc.....I told my one daughter who is allergic to apples that she would be thanking me when she ate this but I didn't tell her why. First taste and she starts screaming that it is just like apple pie!!! she couldn't believe it and was thrilled, said I now have to make it for Thanksgiving dessert so that she doesn't feel left out! Great recipe!

I HAVEN'T MADE THIS BUT IT IS A LOT LIKE THE ZUCCHINI CRISP I MAKE ALL THE TIME. PEOPLE JUST DON'T BELIEVE IT ISN'T APPLES. JUST TODAY I HAD SOME BIG ZUCCHINI AND I PEELED AND SLICED THEM AND PUT THEM IN A PLASTIC BAG AND FROZE THEM. THEN I CAN HAVE A CRISP THIS WINTER. I THINK I WILL MAKE THIS RECIPE TOO. fabulous. I only made a half batch and cooked it in an 8x8 pan for 35 minutes. My husband has had several pieces and still calls it apple cobbler. I'm not correcting him, yet. He hates zucchini.

This is really good! I was hesitant to make it. I had so much zucchini that I needed to do something with it! I am glad I tried this and will make it again! I will probably even try it with some that I have frozen this winter. My husband even really liked it, and enjoyed a piece for breakfast this morning! Try it…you’ll like it too!

This has now become a staple in our house. With our first real bounty of zucchini coming from our garden, I had to find ways to use it up. This recipe is perfect for those huge zucchinis you didn't see to pick in time. Not only does it use up your big zucchinis, but everybody loves it! It makes a very big batch however so unless you're baking for a crowd, I would cut this in half. I don't even skin or seed the zucchini but rather grate the whole thing in my food processor. I even made extra of the zucchini cobbler filling and canned it to make in the future when we don't have our delicious zucchini coming from the garden anymore. Now we will never be without the fixings for this recipe!

Oops, that was "my kitchen smelled (no spelled) of apples).
This cobbler is really quite good. My kitchen spelled of "apples" cooking. My husband had no idea he was eating zucchini (which he hates); he was shocked when I told him. Initially, I found this recipe, as written, too sweet. When I made it a second time, I reduced the 1 cup sugar measure to 2/3 and the 2 cup measure to 1 1/2. I found this better and not overwhelmingly sweet.

THIS COBBLER TASTES EXACTLY LIKE APPLES. I TRIED THIS RECIPE LAST SUMMER AND SINCE THEN HAVE GIVEN OUT THE RECIPE AT LEAST 30 TIMES. MY HUSBAND KEEPS GIVING OUT SAMPLES FOR EVERYONE TO TRY.

This recipe has appeared in your magazine a few times in the past several years. It has been a hit in our house since my children were very little and they are now all thirty something! No one believes it is zucchini. I even can the mixture now for a quick winter dessert.

I agree that this recipe is perfect for the overgrown or too many zucchinis. My 3 vegetable picky kids LOVED it.Although it's not exactly "healthy" with the loaded sugar and butter... I will make again. I did try to use "lite" butter and the dough was very sticky to press in the bar pan. I had to use wax paper to assist. The dough after being cooked just wasn't the same consistancy as using real butter.I added 1/2 c. of walnuts which was a nice touch.
