Zucchini Chocolate Cake Recipe
  • Prep: 25 min. Bake: 45 min. + cooling

Ingredients

  • 1/2 cup butter, softened
  • 1-3/4 cups sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup 2% milk
  • 1/2 cup buttermilk
  • 2-1/2 cups all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups shredded zucchini
  • 1/2 cup semisweet chocolate chips
  • Confectioners' sugar

Directions

  • In a large bowl, beat the butter, sugar and oil until smooth. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine milk and buttermilk. Combine the flour, cocoa, baking soda, baking powder and salt; add to batter alternately with milk mixture, beating well after each addition. Fold in zucchini.
  • Transfer to a greased 13-in. x 9-in. baking pan. Sprinkle with chocolate chips. Bake at 325° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar. Yield: 15 servings.

Just made this cake yesteday and it was great. I did cheat and put on a cream cheese frosting. Ended up having cake for breakfast today, I liked it so much. I guess I'm not diet conscious.

Best chocolate cake I ever tasted. So rich and moist. MY HUSBAND LOVED IT! I had to hide the fact that it had zucchini as an ingredient or he would not have even tried it. He had a piece for supper and said he would want another while watching the ballgame tonight.

I thought this recipe was too sweet but everyone else loved it. They all thought it was brownies. They said they were so moist and that they are. I am going to make this again today to take over to the church.

This was a very good cake, a little different with the zucchini. I used some that I had frozen a month or so earlier. May be a little better with fresh! Got a thumbs up from my husband and 2 little ones!

I made this recipe - it was delicious. Since my neighbors will not eat it because of the zucchini - i froze it in portion sizes - now we can enjoy it for at least a couple of days. Thats as long as it will last.

This is by far the best chocolate cake I have ever made. I also used skim milk and made my own buttermilk and it was awesome!! This is a keeper for sure. I'm going to make another one and freeze it and see how it does. Thanksgiving is just around the corner!

Made the cake, It was very good. It is very moist and a light dessert. I added 3/4 cup of chocolate for my grandson. We ate a half cake in 1 evening meal. I think I will add more chocolate in my next cake!

I cannot imagine why anyone would not love this cake. The reviewers who gave this recipe a low rating must have done something wrong. This cake is deliciously moist and is definitely much better than any plain chocolate cake recipe. I followed the directions exactly and I HIGHLY recommend this recipe. DO try it. If you follow exactly you won't be sorry. Will make it again and again. I am a pastry chef by trade and have made many many cakes.....this is one of the very best! Thank you for a wonderful recipe!

I just made this today. After making it Gluten free (following the rest of recipe to the tee) I put it in a mini Bundt pans and made Ganache to put over it after baking.

Than I made muffins out of the rest and put a Gluten Free apple cinnamon crumb topping on it and baked it. Both turned out well.

I MADE THIS CAKE TODAY AND IT TURNED OUT TERRIBLE. I HAVE MADE ZUCCHINI CAKES BEFORE AND THEY WERE MUCH BETTER THAN THIS ONE. I WON'T BE MAKING THIS AGAIN. WASTE OF TIME.

This cake is awesome! I wouldn`t change any thing. This is 100% better to me than zucchini bread. It`s so moist and i didn`t have any chocolate chips and it`s just to die for. Try it and u will love it to.
