Zippy Beef Fajitas Recipe

Ingredients

  • 1 beef flank steak (1-1/2 pounds)
  • 2 teaspoons ground ginger
  • 2 teaspoons crushed red pepper flakes
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 medium sweet red pepper, cut into strips
  • 1 medium green pepper, cut into strips
  • 1 can (12 ounces) cola
  • 5 green onions, chopped
  • 1/3 cup soy sauce
  • 2 tablespoons minced fresh gingerroot
  • 2 tablespoons tomato paste
  • 1 garlic clove, minced
  • 6 flour tortillas (8 inches), warmed

Directions

  • Cut steak in half lengthwise. In a small bowl, combine the ground ginger, pepper flakes, garlic powder and pepper; rub over steak. Transfer to a 3-qt. slow cooker; add red and green peppers. Combine the cola, green onions, soy sauce, gingerroot, tomato paste and garlic; pour over top.
  • Cover and cook on low 6-7 hours or until meat is tender.
  • Shred meat with two forks and return to the slow cooker; heat through. Spoon beef mixture off center onto each tortilla using a slotted spoon. Fold sides over filling. Yield: 6 servings.
