TIME: Prep/Total Time: 20 min.

Ingredients:

  • 2 medium ripe avocados, peeled and pitted
  • 3 tablespoons mayonnaise
  • 1 plum tomato, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Corn chips

Directions:

In a small bowl, mash the avocados and mayonnaise until smooth. Stir in the tomato, jalapeno, cilantro, lemon juice and salt. Serve with corn chips. Yield: 1-1/2 cups.
