William Tell's Never-Miss Apple Cake Recipe
  • Prep: 40 min. Bake: 50 min. + cooling

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 2 cups sugar, divided
  • 4 eggs
  • 1 cup canola oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 cups chopped peeled tart apples
  • 1 cup shredded carrots
  • 1/2 cup chopped pecans
  • PRALINE ICING:
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, cubed
  • 2 tablespoons 2% milk
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pecans, toasted

Directions

  • In a small bowl, beat cream cheese and 1/4 cup sugar until smooth. Beat in 1 egg; set aside.
  • In a large bowl, beat oil with remaining sugar and eggs until well blended. Combine the flour, baking powder, cinnamon, salt and baking soda; gradually beat into oil mixture until blended. Stir in the apples, carrots and pecans.
  • Transfer half of the apple batter to a greased and floured 10-in. fluted tube pan; layer with cream cheese mixture and remaining apple batter.
  • Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  • In a large saucepan, bring the brown sugar, butter and milk to a boil. Cook and stir for 1 minute. Remove from the heat; whisk in confectioners' sugar and vanilla until smooth. Drizzle over cake. Sprinkle with pecans. Yield: 12 servings.

Disappointed after the effort that was put into this cake. I thought this cake would be much better than it was after the reviews. It did taste a little better on day 2. I have had many other apple cakes that taste much better than this one.

This was one of the best cakes I have tried in a long time.I will make this one alot.The only thing I did different was no pecans in the cake.You should all try this cake if you want something so good. You cant stop eating it. Thanks for the recipe!

This cake is wonderful! I made it to try it out and shared some with family and co-workers. I ended up making it twice more on request for parties. I used fat free cream cheese and substituted applesauce for half the oil. With the applesauce substitution it did take around 5 minutes or so longer to bake. The applesauce made it nice & moist and made the flavor pop a little more. Everyone agreed that the substitution made it even better.

This tasted delicious, but you would be ill advised to eat two slices, or even one, because two slices would be about 1200 calorie. For a person on a 1400 calorie diet (like the Comfort Food Diet) that would be nearly a days worth of calories, mostly from fat and sugar. A great thing to make occasionally, but eating just one piece a week could set you back if your were trying to lose weight.

I made this cake for the first time for our church bazaar. As it was cooling on the table, I turned to make the glaze. When I turned around to get the cake, my dog had jumped on the chair and took a huge hunk our of the side of the cake. What to d0??? I tasted the part that was left and it was soooo good, I made another one for the church. It was one of the first items sold.

I made this cake for a party where there were loads of desserts. My cake was the talk of the night. Everybody loved it. Worried that I might not get it out of the pan I buttered the fluted pan liberally. The cake came right out. Will definitely make this again.

This cake is easy to make but labor-intensive; lots of chopping and peeling. I suggest you make it the day before you plan to serve it, because it is delicious after it has set awhile.

Very good, moist, easy recipe to make. I forgot the pecans and it didn't really matter. Would be great either way. Also I was out of vegetable oil so I substituted applesauce cup for cup. Very good.

Yum! Takes a little time to shred carrots and chop apples, but well worth the effort. I agree with several others, it would be just as good without the cream cheese filling or icing, but both are good with the cake.

I missed a beat on prep., total sugar should have been no more than 1 cup. The taste was so sweet that the apples were not noticed. I would like to try again with only 3/4 cup sugar in batter. That may even be too much. Why would so much sugar be required when the recipes apples?

I have made many apple cakes before and I can't actually say this one is on the top of my list to make again. There was very little flavor. It was moist enough but it definitely is a "heavy" cake. I would also opt for a cream cheese icing as well with the pecans.

Wonderfully good! East to make. I left the nuts out, personal choice. I used Golden Delicious apples. I also replaced vanilla extract with maple extract in cooked frosting, great smell in the house!! This will be one of our regulars!

I forgot to add that I replaced the pecans with walnuts and went from a half a cup to a cup. It is good with the pecans but in my opinion, the walnuts just do the trick!

I have to tell you... I was a little "apple-d" out and then I found this recipe. I made this recipe and could not believe how good this cake is. It is moist, loaded with apples and the extra touch of cream cheese just brings it over the top. On top of that, the caramel icing is just perfect. This recipe has replaced every fall cake recipe I have and I intend to make them for Christmas gifts this year. You definitely will not go wrong with this cake! Outstanding!

First, let me ask-why are people rating the recipe before they even try it??? It doesnt help anyone to rate how it looks. Make it, then rate it!!! That being said...

I have several apple cake recipes tat I alike, and this one rates right ip with the others. The cream cheese filling takes it over the top. It was very moist and I did not find it to be oily. I did not make the icing based on other reviewers saying it was too sweet. I have to agree that it was perfect by itself. Thanks for a great recipe!

I've made this cake several times and have yet to be disappointed. Delicious!!!!! The first time I made it for a group of ladies who raved over it. Hubby was sorry to see it go out the door so I made one later for him. I added coconut as someone suggested and he loved it. We have apple trees so I was happy to come across such a great recipe. I love, love, love the flavor and how moist it is. If you need more flavor try adding a touch of cloves or other spice.

Delicious cake! Cream cheese filling is fantastic and the icing is fantastic. Like previous reviews warn, it does set up fast, so be careful. Also, I wouldn't advise using a fancy bundt pan, as my cake didn't come out easily at all. A plain pan would work much better for getting the cake out of this pan.

This sounded good so I thought i'd make it for a funeral at our church. It stuck to the pan when I went to flip it to the cooling rack..complete disaster! Fell apart. I tasted the scraps that fell and it was way to oily tasting..and not much flavor. So disappointing.

Made the cake a couple of days ago---very moist and not as "clumpy" as usual apple cake I make. I liked the frosting---only I got interuped when I was making it and the frosting set up on me. I added more milk some I could drizzle. Will make it again. My husband kept "tasting" it and the 2 of us didn't need any more so I gave the other half to family.

HEALTHIER VERSION - This cake is an excellent fall treat! I made a couple changes to make it just a little healthier [although it's hard to say a sugary cake is "healthy"! - but that's not the point to eating it, now is it?! :o)] Instead of 1 cup canola oil, I used 1/2 cup olive oil and 1/2 cup unsweetened applesauce. I also used Philadelphia 1/3 less fat Cream Cheese. Even with these changes, this is an excellent apple cake!

AWESOME cake! I have made apple cakes before, but never one like this. The addition of the carrots helps keep it moist and the cream cheese layer gives it a different twist. Definitely will make again!

I agree with everybody. This is one of the best cakes that I have ever baked. The icing does set up pretty fast. A good tip is putting the icing in a glass measuring cup and it is much easier to drizzle on the cake.

One word for this cake ... AWESOME!!!! I have made this cake three times now. It's very easy for a scratch cake and everyone loves it. Great flavors, extremely moist and melts in your mouth! A real keeper! The icing tip from the other reviewer is right on; don't dally putting on the icing as it sets up very quickly; the pecans won't stick and will just fall off ... do it quickly and it works perfect!

I took this cake to a potluck and it was gobbled up because it presents so well. I thought the cake was good but not exceptional; I ate my whole piece but wouldn't have gone back for seconds.

Delicious - moist. Add the icing QUICKLY because it sets up REALLY fast. We dallied and ending up having to press the pecans into the already hardened icing. YUMMY!
