White Chocolate Holiday Cookies

INGREDIENTS
- 1/2 cup butter, softened
- 1/2 cup shortening
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 1 egg
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 6 squares (1 ounce each) white baking chocolate, coarsely chopped
- 1-1/2 cups chopped pecans
DIRECTIONS
In a large mixing bowl, cream the butter, shortening and sugars until light and fluffy. Beat in egg and extract. Combine the dry ingredients; gradually add to creamed mixture. Stir in white chocolate and pecans.
Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Yield: 10 dozen.
