White Chocolate Cranberry Blondies Recipe

Ingredients

  • 3/4 cup butter, cubed
  • 1-1/2 cups packed light brown sugar
  • 2 eggs
  • 3/4 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1/2 cup dried cranberries
  • 6 ounces white baking chocolate, coarsely chopped
  • FROSTING:
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 tablespoon grated orange peel, optional
  • 6 ounces white baking chocolate, melted
  • 1/2 cup dried cranberries, chopped

Directions

  • In a microwave, melt butter; stir in brown sugar. Transfer to a large bowl; cool to room temperature. Beat in eggs and vanilla. Combine the flour, baking powder, salt and cinnamon; gradually add to butter mixture. Stir in cranberries and chopped chocolate (batter will be thick).
  • Spread into a greased 13-in. x 9-in. baking dish. Bake at 350° for 18-21 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool on a wire rack.
  • For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and orange peel if desired until blended. Gradually add half of the melted white chocolate; beat until blended. Frost brownies. Sprinkle with cranberries. Drizzle with remaining melted white chocolate. Cut into bars. Store in the refrigerator. Yield: 2-1/2 dozen.

I've made this twice now and it is a HUGE hit. I keep forgetting to use unsalted butter so mine have come out a tad salty. This is a great recipe but I have found that a 1/2 cup of chopped cranberries on top isn't enough, so I use more. Keep extra white chocolate on hand if this is your first time melting - I burned mine the first go-around. Enjoy!

I know before I make it, it will be delicious since its been compared to the Cranberry Bliss Bar from Starbucks. My question....I just moved from sea level to 6200 ft. How should I adjust this recipe due to the elevation. I ammaking this for a cookie exchange this ciming weekend. Thank you in advance.

These are just like Starbuck's cranberry bliss bars(i'd argue, even better!). I highly recommend using the orange zest in the frosting, it adds another dimension of flavor and cuts the sweetness of the white chocolate. It was a wonderful addition to the Thanksgiving desserts at our house!

I want to make these, but cannot have cranberries due to medication interactions...can anyone recommend an alternative... maybe cherries? Not a big apricot fan, so that wouldn't work.

These sounded so good with the apricots and almonds and white chips. I started making a double batch of these thinking I had all the ingredients but I was wrong. I had no apricots so I used dried cranberries. I had only 1 bags of white chips so I also added a bag of butterscotch chips. All and all it was a good recipe but a little over- sweet with the butterscotch chips. I would definitely be willing to make this again with the ingredients the recipe really calls for.

We made this recipe for Christmas banquets a couple years ago at my work, feeding about 10,000 people. It was a hit and quickly became known as a "little piece of heaven." Delicious!!

These bars were delicious! I made them for Christmas dessert and people were asking to take some home with them. I substituted orange extract in the frosting because I forgot to buy an orange. I also used white chocolate chips in the bar because I'm not so great at chopping. Lol!

Theese cookies are absolutely delicious. I made these for Christmas along with a bunch of other cookies and these are by far everyones favorite. Everytime I give these to someone they want the recipe. I will definitely be making these again.
