Wearing O' Green Cake Recipe
  • Prep: 25 min. Bake: 30 min. + cooling

Ingredients

  • 1 package white cake mix (regular size)
  • 2 packages (3 ounces each) lime gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • TOPPING:
  • 1 cup cold milk
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • Green sprinkles

Directions

  • Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking dish. Cool on a wire rack for 1 hour. In a small bowl, dissolve gelatin in boiling water; stir in cold water and set aside.
  • With a meat fork or wooden skewer, poke holes about 2 in. apart into cooled cake. Slowly pour gelatin over cake. Cover and refrigerate.
  • In a large bowl, whisk milk and pudding mix for 2 minutes (mixture will be thick). Fold in whipped topping. Spread over cake. Decorate with sprinkles. Cover and refrigerate until serving. Yield: 12-15 servings.

I grew up on this cake, only my mom only used the frozen whipped topping, can't wait to try it with the pudding/topping mix. When my room mate's son was 5 he requested a grape cake for his birthday......jello cake to the rescue! It is a wonderful, versatile recipe that belongs in everyone's recipe box!

I'm rating this recipe based on the existing one I already know. I, too, have a mother-in-law that makes this cake regularly. It is one of her most-requested desserts. Her version uses yellow cake mix and raspberry jello. She also layers the pudding and cool whip on top, but folding them together works just as well. My niece's husband recently had this as his groom's cake because he likes it so much! I am sure this St. Patrick's Day version is equally as delicious and can't wait to give a try!

My mother-in-law makes this cake all the time, especially for b-days. She makes it a strawberry-jello cake. Uses strawberry jello instead, and for the topping she uses one 8oz tub of coolwhip and a tub of strawberries in juice mixed together and layered over the top. Great cake, always goes over really well!

Most of my co-workers are of Finnish, not Irish, descent, so perhaps I should have used grape Jello and purple sprinkles in honor of St. Urho, but, whatever. I made this cake last night and took it in to work today (St. Patrick's Day 2008) and it was gone in less than two hours. One co-worker asked for the recipe, saying what a nice light cake this is. Normally I like to make my cakes from scratch, but this is one recipe I will be keeping. Using red Jello and red or pink sprinkles would be excellent for a little girl's birthday cake.
