This cake as excellent and perfect for St. Patricks. I am going to try it with different flavored jellos.

Not a real fan of this cake. I know I was supposed to use lime gelatin (St. Patrick's Day) but we don't care for it so I used rasberry. It tasted good. The frosting didn't seem to have much flavor. And my didn't look as good as the picture ;)

Thsi was an excellent cake! I made it one night on a whim and my entire family enjoyed it-so much so that every single one of them went back for seconds! Now everyone is asking me to make it again...Next time I'm going to change it up a little and maybe do some flavors/colors that will go well with Easter :)

I took this cake to work St. Patrick's Day and everyone loved it. I've made poke cakes before but never with the lime flavor. It was a perfect combination of tart and sweet. Thanks for the recipe.

This was easy and fun to make. I have yet to taste it, but it looks good. I used rainbow sprinkles because I could not for the life of me find green sprinkles.

My Pastor's wife makes this with *lemon* cake mix, just one package of jello (dissolved in 3/4 c boiling water, then 1/2 c cold water). She cools the cake for about 30 min, then pours the jello over the slightly warm cake and refrigerates it while making topping. She uses one envelope of whipped topping mix, a package (4 serving size) of lemon instant pudding and 1 1/2 c cold milk. This cake may be frozen, too!

If you wanted to try and use pistachio pudding, you would just need to make the holes bigger by using a straw (like any other pudding poke cake). Then, when you make the pudding, stop mixing it before it becomes too thickened. Pour the thinner pudding immediately onto the cake. The pudding will still thicken in the holes while chilling.

Has anyone tried to use Pistachio Pudding in place of the lime jello?

I would love to make this cake for St. Patrick's Day but am concerned the lime jello may make it too tart. I'm not sure if pudding would work down into the cake or just pool on top. Has anyone tried this or have alternate suggestions or input?

Make this every year for Christmas. Baked in two round pans and use one pkg of green and red jello. So good and very festive and never had left overs!

I have made this a couple times. First time I followed the recipe exactly and it was great. The most recent time I wanted to cut some calories out and it still turned out just as great. I used sugar free Jello, sugar free Pudding, and reduced fat cool whip. Also when I made the cake I substituted apple sauce for the vegetable oil and used egg beater egg whites. I didn't tell anyone that I did this and everyone gobbled it down without saying anything about it tasting different.

I almost doubt I would make it again. It's good but not great. I mean i think it would of been better with starwberries.

Though "poke cakes" are great - tasty, colorful, and moist, the lime jello made it taste tart. I love the topping though. I used sugar free jello and pudding, and low-fat whipped topping. I will make more poke cakes, but not w/lime jello.

Back in the "old days", this was known as a Jello Poke Cake. Enjoyed it then and enjoy it now! Easy to make--I will do it again with my grandkids for Memorial day. We will use blue and red Jello and be a VERY patriotic red, white and blue dessert with sparklers on top!

I grew up on this cake, only my mom only used the frozen whipped topping, can't wait to try it with the pudding/topping mix. When my room mate's son was 5 he requested a grape cake for his birthday......jello cake to the rescue! It is a wonderful, versatile recipe that belongs in everyone's recipe box!

I'm rating this recipe based on the existing one I already know. I, too, have a mother-in-law that makes this cake regularly. It is one of her most-requested desserts. Her version uses yellow cake mix and raspberry jello. She also layers the pudding and cool whip on top, but folding them together works just as well. My niece's husband recently had this as his groom's cake because he likes it so much! I am sure this St. Patrick's Day version is equally as delicious and can't wait to give a try!

My mother-in-law makes this cake all the time, especially for b-days. She makes it a strawberry-jello cake. Uses strawberry jello instead, and for the topping she uses one 8oz tub of coolwhip and a tub of strawberries in juice mixed together and layered over the top. Great cake, always goes over really well!

Most of my co-workers are of Finnish, not Irish, descent, so perhaps I should have used grape Jello and purple sprinkles in honor of St. Urho, but, whatever. I made this cake last night and took it in to work today (St. Patrick's Day 2008) and it was gone in less than two hours. One co-worker asked for the recipe, saying what a nice light cake this is. Normally I like to make my cakes from scratch, but this is one recipe I will be keeping. Using red Jello and red or pink sprinkles would be excellent for a little girl's birthday cake.
