Warm Toasted Sesame Chicken Salad Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup sesame seeds
  • 3 boneless skinless chicken breasts
  • 1 cup chopped green onions
  • 1/2 cup low sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon minced fresh gingerroot
  • 1 tablespoon Asian mustard
  • 1/2 teaspoons salt, optional
  • 1 teaspoon granulated SPLENDA® No Calorie Sweetener
  • 1 teaspoon ground coriander
  • 1 green lettuce leaf

Directions

  • Preheat oven to 350°F.
  • On small baking sheet, spread sesame seeds in single layer. Bake 2 minutes, or until golden.
  • Wash and dry chicken. Cut into 1-inch cubes.
  • In large skillet, heat olive oil over medium. Add chicken. Saute 5 minutes, until chicken is cooked.
  • Add half of sesame seeds, onions, broth, lemon juice, ginger, mustard, salt, Splenda, and coriander. Cook 2 minutes over medium heat.
  • Arrange lettuce on serving plate. Spoon chicken mixture on top. Sprinkle with remaining sesame seeds.
