Waldorf Salad with Dates Recipe
  • Prep: 15 min. + chilling
  • Yield: 2 Servings

Ingredients

  • 2 tablespoons mayonnaise
  • 1-1/2 teaspoons sugar
  • 1/4 teaspoon lemon juice
  • Dash salt
  • 1/2 cup whipped topping
  • 1 medium apple, chopped
  • 1/4 cup chopped celery
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup chopped dates

Directions

  • In a small bowl, combine the mayonnaise, sugar, lemon juice and salt. Fold in the whipped topping. Stir in the apple, celery, walnuts and dates. Chill for 1 hour. Yield: 2 servings.

Nutritional Facts 1 cup (prepared with reduced-fat mayonnaise and reduced-fat whipped topping) equals 292 calories, 16 g fat (3 g saturated fat), 5 mg cholesterol, 207 mg sodium, 35 g carbohydrate, 4 g fiber, 5 g protein.

This is one of my favorite recipes. Instead of using dates, I use dried cranberries. The whipped topping is the secret to making this recipe superb.
