If you’re ready to try vegan baking but are nervous about losing the butter, eggs and cream, this recipe is a perfect place to start. These vegan chocolate chip cookies are soft and chewy, and they’re loaded with luscious chocolate chips and chopped walnuts. It’s one of our favorite vegan recipes.

Ingredients for Vegan Chocolate Chip Cookies

  • Dark brown sugar
  • Canola oil
  • Vanilla soy milk
  • Sugar
  • Unsweetened applesauce
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Dairy-free semisweet chocolate chips
  • Finely chopped walnuts

Directions

Step 1: Combine the wet ingredients

To get started, beat together brown sugar, oil, soy milk, sugar, applesauce and vanilla in a large bowl until well blended.

Step 2: Whisk the dry ingredients

In a separate bowl, whisk together flour, baking soda and salt.

Step 3: Finish the cookie dough

Gradually add the dry ingredients to the wet ingredients and mix well. Stir in the chocolate chips and chopped nuts. Cover and refrigerate the dough for one hour.

Step 4: Drop and bake

Take the dough out of the refrigerator, and preheat your oven to 375°F. Line baking sheets with parchment paper, then drop rounded tablespoonfuls of dough onto the parchment, keeping two inches between each mound.

Bake for 10 to 12 minutes or until the cookies’ edges are lightly browned. Let the cookies cool for one minute on the baking sheets, then transfer the cookies to wire racks and let cool completely.

Ingredients

  • 1-1/4 cups packed dark brown sugar
  • 1/2 cup canola oil
  • 6 tablespoons vanilla soy milk
  • 1/4 cup sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup dairy-free semisweet chocolate chips
  • 1/2 cup finely chopped walnuts

Directions

  1. In a large bowl, beat the first 6 ingredients until well blended. Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well. Stir in chocolate chips and nuts. Cover and refrigerate for 1 hour.
  2. Drop by rounded tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks.
