Even cooks who normally shy away from rolled cookies can make these with confidence. The dough is so easy to work with after a mere 30 minutes of chilling.

This is my favorite roll-out recipe. I have made it the original way as well as substituting some of the vanilla with almond or orange extract for a different flavor, ie:2 tsp orange extract, 1 tsp vanilla. Everyone loves these cookies! However, I have had trouble with the frosting recipe, and now use a different one. But overall, very good!
