Tutti-Frutti Angel Food Cake

1-1/2 cups egg whites (about 10) 1-1/4 teaspoons cream of tartar 1/2 teaspoon salt 1 teaspoon vanilla extract 1/2 teaspoon almond extract 1 to 2 drops red food coloring, optional 1-1/2 cups sugar 1-1/4 cups cake flour 1 cup finely chopped mixed candied fruit
In a large mixing bowl, beat the egg whites until foamy. Add cream of tartar and salt; beat until soft peaks form. Add extracts and food coloring if desired. Add sugar, 1 tablespoon at a time, beating well
