Turkey Salad Sandwiches Recipe

Ingredients

  • 10 ounces deli turkey, cubed
  • 2 cups torn romaine
  • 6 bacon strips, cooked and crumbled
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 1/3 cup frozen peas, thawed
  • 2 green onions, thinly sliced
  • 1/4 teaspoon pepper
  • 12 slices whole wheat bread

Directions

  • In a large bowl, combine the first eight ingredients. Spoon 2/3 cup mixture on each of six bread slices. Top with remaining bread slices. Yield: 6 servings.

Nutritional Facts 1 sandwich equals 398 calories, 22 g fat (5 g saturated fat), 43 mg cholesterol, 1,039 mg sodium, 28 g carbohydrate, 5 g fiber, 22 g protein.

Tip

Keeping Lettuce Fresh

To store lettuce to keep it crisp and fresh, wash lettuce in cold water and drain very well. Use a “salad spinner” or pat it dry with paper towels. Store in a resealable plastic bag or airtight container with a dry paper towel in the bottom to absorb any leftover moisture. (Be certain to replace the towel if it gets wet.) For extra-crispy salads, you may want to use a lettuce variety like romaine that’s naturally more crisp.

This was so easy to make and so delicious I couldn't get enough. I also used torn up baby spinach and added more peas than it called for. My friend liked it so much she bugged me for the recipe. Can't wait to make this again!
