Turkey Pasta Soup Recipe

Ingredients

  • 1 cup uncooked small pasta shells
  • 1 pound lean ground turkey
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 3 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 2 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained
  • 2 cans (14-1/2 ounces each) Italian stewed tomatoes
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon fennel seed, crushed
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes

Directions

  • Cook pasta according to package directions. Meanwhile, in a large stock pot, cook turkey, onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the broth, beans, tomatoes and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
  • Drain pasta and add to the soup. Cook 5 minutes longer or until heated through. Yield: 10 servings.

Nutritional Facts 1-1/3 cup equals 211 calories, 4 g fat (1 g saturated fat), 36 mg cholesterol, 868 mg sodium, 28 g carbohydrate, 6 g fiber, 15 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1 starch.

Absolutely Delicious!!

I didn't use the fennel seed

I browned a little bit of pork sausage (1/4 lb or so) with the onions and garlic, then deglazed with about 1/3 c. of white wine. After that I added our leftover turkey and remaining ingredients, minus the fennel. Very good. The sausage kicked up the flavor a notch.

I actually left the fennel out, but after reading these reviews, I think I'll put it in next time. I thought it was good even without. I put in extra garlic and decreased the oregano a bit. Also left out the extra salt.

I felt like this needed something else. Maybe the spinach would have made it better. Or some carrots? I did like the flavor of the fennel though.

Excellent soup! Very flavorful and I actually thought that it didn't need the added salt. Will become a staple and tastes great the next day too! Thanks for sharing.

I used left over turkey from Thanksgiving for the meat and it is delicious....

I love this soup recipe! The flavor is excellent! I like to add spinach just before serving. I have also added cut up carrots and sliced zucchini. I have replaced the ground turkey with ground sausage and that too gives this soup a different but great taste!

Absolutely delicious! I added carrots and celery , fresh parsley and sprinkled each serving with grated Parmesan -wonderful. Good with grilled cheese sandwiches too!

This was great. Next time I might try adding a little spinach at the end, or use turkey Italian sausage--lots of room for variations on a good recipe.
