Tropical Bananas Recipe

Ingredients

  • 2 medium firm bananas, sliced
  • 1 tablespoon lime juice
  • 2 tablespoons salted peanuts
  • 1 tablespoon honey
  • 1 tablespoon flaked coconut
  • 1-1/2 teaspoons grated lime peel

Directions

  • In a small bowl, toss bananas with lime juice. Add peanuts and honey; mix well. Spoon into individual dishes. Sprinkle with coconut and lime peel. Serve immediately. Yield: 2 servings.

Nutritional Analysis: 1 cup equals 210 calories, 6 g fat (2 g saturated fat), 0 cholesterol, 48 mg sodium, 40 g carbohydrate, 4 g fiber, 4 g protein.

Banana Basics

Look for plump bananas that are evenly yellow-colored. Green bananas are under-ripe, while a flecking of brown flecks indicates ripeness. If bananas are too green, place in a paper bag until ripe. Adding an apple to the bag will speed the process. Store ripe bananas at room temperature. To prevent bruises, a banana hook or hanger is a great inexpensive investment. For longer storage, you can place ripe bananas in a tightly sealed plastic bag and refrigerate. The peel will become brown but the flesh will remain unchanged. One pound of bananas equals about 3 medium or 1-1/3 cups mashed.

I LOVE this so much, when I didn't have lime one time I just substituted for lemon juice, but it's a taste difference with lemon & lime. However this is one of my favorite banana recipes :D

OMgoodness, this sounds so good! In elementary school we used to have a dessert similar to this using mayo in the dressing with the coconut toasted, it was my favorite. I think this is a wonderful lower fat option, Thank You for the memory, Deb in Ocala, Fla
