Triple-Chocolate Peppermint Treats Recipe

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2-1/2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1/2 cup 60% cacao bittersweet chocolate baking chips
  • WHITE CHOCOLATE FROSTING:
  • 1/2 cup white baking chips
  • 4 ounces cream cheese, softened
  • 3 cups confectioners' sugar
  • 1/3 to 1/2 cup crushed peppermint candies

Directions

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, salt and baking soda; gradually add to creamed mixture and mix well. Stir in the chocolate chips.
  • Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 8-10 minutes or until set. Cool for 2 minutes before removing to wire racks to cool completely.
  • In a microwave, melt baking chips; stir until smooth. Cool.
  • In a small bowl, beat cream cheese and confectioners' sugar until smooth. Beat in melted chips. Frost cookies; sprinkle with peppermint candies. Yield: about 6-1/2 dozen.

My husband says these are his new favorite Christmas Cookie. :-) Mine turned out just fine following the recipe...no alterations needed!

So good! Chocolate and cream cheese-peppermint frosting make for an excellent combination. Also used the frosting on a mocha cookie, which was also really good - tasted like a drink from Starbucks!

They are very good - my daughter and I made them. We had a lot of trouble with the frosting though. I had to add a little milk to mixture to get it smooth and spreadable. Other than that, they were easy to make. Will make again.

This cookies are great.... now that I know what to expect! This cookies burn very easily, both me & my mom experienced this in our own seperate ovens. Also - the icing... I don't know how other people made it following those directions! It came out SOO thick, I couldn't even mix it with the beater! I had to add 1/4 cup of melted butter to it, then it was good to go. I too added some peppermint extract (1/4 teaspoon) & piped the frosting on for a neater look.

Also - crush the candies up as fine as possible. I liked it better than having chunks of candy on top of the cookie. If it's fine, it's more like a little sugar on top of the cookie.

VERY SWEET cookie. If you're looking for something not too sweet, this is NOT the cookie for you! But - good none the less.

These cookies have WOW! They are delicious as well as beautiful! They recipe was very simple and easy to follow. They turned out perfect! I changed the frosting a bit by adding white candy melts instead of white chocolate. I also added 1/8 tsp peppermint extract to the frosting which gave it a perfectly cool kick for the holidays. And just for fun, I tinted the frosting pink and used a pastry bag with a large round tip to pipe it on, which is really pretty on the chocolate brown cookies.

These were delicious. Mine appeared flatter than those pictured but were very nice. I had trouble meltling the white chocolate; it burned in the microwave. I went to Hershey's web site and they recommended melting with 1 Tablespoon of shortening at 50% power for 30 seconds, stir and continue melting stirring every 15 seconds until melted. That seemed to work.
