Tortellini with Tomato-Cream Sauce Recipe

Ingredients

  • 1 package (16 ounces) frozen cheese tortellini
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1-1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 cups heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • Additional grated Parmesan cheese, optional

Directions

  • Cook tortellini according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the tomatoes, spinach, basil, salt and pepper. Cook and stir over medium heat until liquid is absorbed, about 3 minutes.
  • Stir in cream and cheese. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened.
  • Drain tortellini; toss with sauce. Sprinkle with additional cheese if desired. Yield: 6 servings.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

This is by far one of the easiest, best tasting, pasta dishes I have ever tried. I made the recipe exact and it was awesome. Everyone thought I had ordered out for Italian. Next time I will make extra.

<p>EVERYONE loved this! It was gone in a heartbeat. I cut up 8 plum tomatoes instead of canned and used milk insead of cream. i was worried that it would not thicken up with milk, but it thickened ight up when i added the cheese..</p>

I was not disappointed. It lived up to all the reviews it got. This was Delicious with a Capital D! It was quick and easy to make but looks like you spent all day on it. It is sure to impress any friends and/or family. Can't wait to eat leftovers tomorrow.
