Tortellini with Tomato-Cream Sauce Recipe

Ingredients

  • 1 package (16 ounces) frozen cheese tortellini
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1-1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 cups heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • Additional grated Parmesan cheese, optional

Directions

  • Cook tortellini according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the tomatoes, spinach, basil, salt and pepper. Cook and stir over medium heat until liquid is absorbed, about 3 minutes.
  • Stir in cream and cheese. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened.
  • Drain tortellini; toss with sauce. Sprinkle with additional cheese if desired. Yield: 6 servings.

Parmesan Pointers

When a recipe calls for shredded Parmesan cheese, use the cheese found in bags in the grocery store dairy section. Shredded Parmesan is often used in salads or soups where the shreds make a pretty garnish. If grated Parmesan is called for, use the finely grated cheese sold in containers with shaker/pourer tops. This type works well in lasagna and casseroles. (You can substitute either shredded or grated Parmesan in equal proportions in your favorite recipes.) If you decide to buy a chunk of Parmesan cheese and grate your own, be sure to use the finest section on your grating tool. You can also use a blender or food processor. Simply cut the cheese into 1-inch cubes and process 1 cup of cubes at a time on high until finely grated.

I love this recipe. The sauce goes well with regular noodle pasta but it isn't as filling. Using dried minced onion works, too.

I have made this recipe several times. The first time I made it exactly as written and would give it 5 stars. Tasted great as leftovers the next day. The second time I made it I used a can of Rotel tomatoes in place of diced and the flavor was quite good although it was a little drier because the can of Rotel is a bit smaller than diced. I felt quite confident that the leftovers would be good enought that I served them to a guest that arrived unannounced...he loved it! I have just finished eating the third try and again used what I had on hand. I used the written recipe and added 2 tsp of jarred diced jalepeno and about a 1/4 cup each of diced red and green peppers. The peppers just added another layer of flavor. I always complain to my husband when people rate a recipe, either high or low, but say how they changed the recipe. It seems unfair to rate a recipe if you didn't follow it as written. That said, I have rated this recipe 5 stars as written and 5 stars for the ability to add to it as desired...try it, I think you will be impressed!

Its a keeper! This was excellent! Easy and delicious! Even my picky eater liked it! Will make again, and prbably for a dish at a potluck! Made it for a main dish, although I only used 8oz tortellini and it was plenty, made 4 servings.

Yummy! My whole family liked it. I doubled the sauce ingredients (except the spinach & tomatoes) so we would have left-overs for lunch the next day. Even though I doubled the sauce ingredients, my family thought it had too much spinach. I will make again, but use 1/2 the package of spinach.

It was a good recipe aside from one thing. The can of tomatoes should be drained. The undrained can made the sauce much too runny. I think the recipe could use a touch more spice, otherwise it was simple and tasty.

Enjoyed the recipe. I thought the tortellini made to recipe too rich. I would enjoy it better with maybe small pasta shells. The next time I make it, I would add extra 1/2 can diced tomatoes and extra cream and a couple extra garlic cloves. My family enjoyed it as well.
