This soup is delicious, pretty and unbelievably fast to make. For a creamy variation, I sometimes substitute cream of mushroom soup for the French onion soup. If there are any leftovers, they taste even better the next day. - Marsha Farley, Bangor, Maine

Love this recipe! The only thing I changed was using canned green beans instead of frozen.

I haven't tried it out yet, but can already see how tasty this will be. Double batch for sure! PS for the person wanting to add more tortellini, perfectly fine but you'll need to add more water and possibly will want to add another can of the soup to keep it from getting watery. As a side note, when I make beefy/oniony recipes, I change up 1-2 cups of water for red wine (box wine perfect). Makes the broth or gravy sweet and tangy :)

is it ok to use a larger package of tortellini? 9oz doesnt seem like a lot for 6-8 servings, i accidently got the 20 oz,i'm a new cook so sorry if the question seems stupid!

Good! The 2nd time I made it I used 1/2 ground beef & 1/2 sweet italian sausage, 2 c. water + 1 1/2 c. vegetable broth, omitted the green beans and substituted 2 c. chopped baby spinach for the zucchini and used italian seasoning in place of basil. YUM!!

I increased the water to 4 c. and used 1/2 pkg. of onion soup mix instead of the canned onion soup. Instead of fresh zucchini I used canned zucchini in tomato sauce which I always have on hand for recipes that call for zucchini when I don't have fresh on hand.

I added a half of an onion and 3 gloves of chopped garlic added a little more flavor.very yummy!

I made it without the zucchini. It was very delicious and will become a well used recipe. I've already passed it on to a friend of mine looking for healthy pasta dishes.

Two friends raved over this recipe. When I made it the first time, I tried the creamy variation mentioned in the description but didn't really care for it. I decided to give it another try, and it is so much better with the French onion soup. We'll definitely be having it again at our house!
