This soup is delicious, pretty and unbelievably fast to make. For a creamy variation, I sometimes substitute cream of mushroom soup for the French onion soup. If there are any leftovers, they taste even better the next day. - Marsha Farley, Bangor, Maine

Tortellini Soup Recipe

Ingredients

  • 1 pound ground beef
  • 3-1/2 cups water
  • 1 can (28 ounces) diced tomatoes, undrained
  • 1 can (10-1/2 ounces) condensed French onion soup, undiluted
  • 1 package (9 ounces) frozen cut green beans
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 medium zucchini, chopped
  • 1 teaspoon dried basil

Directions

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the remaining ingredients; bring to a boil. Cook, uncovered, for 7-9 minutes or until tortellini is tender. Yield: 6-8 servings.

    Alongside Tortellini Soup, serve refrigerated crescent rolls. Before baking, sprinkle the dough with Parmesan cheese.

I added a half of an onion and 3 gloves of chopped garlic added a little more flavor.very yummy!

I made it without the zucchini. It was very delicious and will become a well used recipe. I've already passed it on to a friend of mine looking for healthy pasta dishes.

Two friends raved over this recipe. When I made it the first time, I tried the creamy variation mentioned in the description but didn't really care for it. I decided to give it another try, and it is so much better with the French onion soup. We'll definitely be having it again at our house!

I must have done something wrong. The soup was very weak and watery. Not much flavor. It wanted to be better.

This is very easy to make and my family really liked it. I added a tablespoon of brown sugar to take the bite out of the tomato. Will be making this again.

I made this hearty soup for our campground group on Soupfest 2009 night, it was a hit. I made a double batch and had maybe a bowl full left. Everyone was asking for the recipe. I would make this again in a heartbeat.
