Tomatoes Supreme Salad

After I retired, I persuaded my wife to let me do most of the food preparation. This refreshing salad is simple to put together, but the results are fantastic.Wendell Obermeier, Charles City, Iowa8 ServingsPrep: 10 min. + chilling
Ingredients
- 8 thick tomato slices
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons sugar
- 8 thin sweet onion slices
- 1/2 cup vinegar
- 8 green pepper rings
- Chopped fresh parsley
Directions
- Place tomato slices on paper towel to drain excess moisture; place on
- serving plate. Combine salt, pepper and sugar; lightly sprinkle half
- over tomatoes. Top each tomato with an onion slice. Sprinkle 1
- tablespoon of vinegar over each onion. Sprinkle remaining salt
- mixture over onions. Cover and refrigerate at least 30 minutes
- before serving. Garnish with green pepper rings and parsley. Yield:
- 8 servings.
